#CelebrateAtHome: Celebrating mom with this easy mini Strawberry Shortcake recipe

This Mother’s Day, it is more important than ever to celebrate mom and show her how much we care by connecting her to the people and things she loves. Although we may be apart, virtual get-togethers and curbside drop-offs can bring us together.


We reached out to Rogers Ambassadors and mommy bloggers Lena Almeida (Listen2Lena) and Jaime Damak (Je Suis Une Maman) to show us how they’re celebrating Mother’s Day this year. Join them on Friday, May 8, at 2pm for an Instagram Live chat session and a special #bakedate to recreate a semi-homemade mini version of Lena’s mom’s famous Strawberry Shortcake. Easy Mini Strawberry Shortcakes
Makes 4 | Level: Beginner

Here’s what you need:
2 cups- sliced strawberries, keep some full strawberries aside for garnish
2 tbsp- granulated sugar
4 rounds- mini angel food cake
1 cup- whipped cream or whipped topping

1. Mix 2 cups of sliced strawberries with 2 tablespoons of sugar and set aside.

2. Next, cut the mini angel food cake rounds in half horizontally.

3. Now you can start building your layers. Start by the bottom half of the mini angel food cake round, then add the macerated strawberries, and whip cream, then repeat.

4. Garnish the top with mint leaves and strawberries and surprise your mom with your impressive “baking” skills.
